Émilien Le Normand, chef of the fine dining restaurantLes Coqs
Émilien Le Normand owes his vocation to a family who love to eat and cook. His passion for cooking dates back to childhood, and naturally led him through a series of training courses, culminating in a bachelor's degree in international fine dining.
After a work-study placement at Fauchon, he went on to work in a succession of Michelin-starred restaurants, spending a year and a half at the restaurant Guy Lassaussaie, near Lyon, then four years at La Côte Saint-Jacques in Joigny, alongside Jean-Michel Lorain.
An experience as decisive professionally as it was personally, since it was there that he met Noémie, who would become his wife.
Originally from Champcueil, in the Essonne, Émilien wanted to return to his home region: in 2016, the couple left Joigny and began looking for a location for their future restaurant, which they positioned from the outset in the realm of fine dining.
In the end, it was a former furniture shop on the Place du Marché in Milly that became home to Les Coqs. After a year of major works and of building relationships with the best producers, the restaurant opened on a public holiday, 14 July 2017.
Émilien works in the kitchen, where he constantly renews his culinary creations together with his producers. He and Noémie are surrounded by a team of four front-of-house staff and four in the kitchen, making every meal a memorable moment in a warm place where you feel at ease and want to come back.
Noémie Le Normand, hostess of the fine dining restaurantLes Coqs
Originally from Nancy, Noémie Le Normand began her career at the hotel school of the Lycée Stanislas, where she completed her training with an additional qualification in plated desserts.
After her apprenticeship at Le27Gambetta, a fine dining restaurant in Nancy, she joined La Côte Saint-Jacques, where she worked as a pastry chef and met Emilien.
Then came the wonderful adventure of creating their own restaurant: after working for a while in the kitchen of a restaurant in Barbizon, Noémie left the world of pastry to become the hostess of Les Coqs.
The woman her husband fondly calls “the most beautiful smile in Milly” carries out this role with a genuine desire to welcome guests with kindness and attention, and to ensure their well-being and the smooth running of the restaurant.
Noémie has not forgotten her roots either: proud of her Lorraine origins, she has a special fondness for the famous pâtés lorrains and mirabelle plum tarts!
